Zing and ting in every gooey, crunchy bite. Adjust the portions to your liking: you may want more avocado, less apple slices, or omit the shallots altogether. I'm confident this is a keeper.
  • Day old bread, 4 to 6 slices (depends on bread size)
  • Delicioso Sandwich Spread (another SNNC recipe)
  • Hormone-free, ethically-raised, ham, sliced (not too thick!) to cover bread
  • ½ to 1 peeled avocado, depending on size
  • ½ to 1 lime, freshly squeezed, depending on size
  • 1 shallot, slice thinly
  • Large handful of spinach
  • ½ organic apple, sliced
  • Swiss cheese, shredded, enough to cover (to preference)
  1. Mash avocado with lime juice. Set aside.
  2. On a cookie sheet, arrange bread slices.
  3. On each bread slice, place enough spread to cover.
  4. In equal divided portions, spread the avocado and lime mixture on each slice.
  5. Divide the shallot slices amongst the bread pieces, on top of the avocado mash.
  6. Place to your preference enough spinach leaves to cover the shallot slices.
  7. Then put slices of apple on top of the spinach, pressing down gently.
  8. Finally, sprinkle Swiss cheese -- or another preferred type - on top to cover all layers.
  9. Broil in oven for about 15 to 20 minutes until cheese is golden brown. Careful it doesn't burn!
  10. Enjoy the yumminess... get the napkins ready. :)
